Healthy, Satisfying Salad Recipes

These are my own recipes. Please feel free to amend the recipes to your own taste.


Tuna vingeret salad

Ingredients

  • Tomatoes
  • Sugar snap peas
  • 120g Cous Cous
  • 1 tin of tuna
  • 2 tsp of balsmic vinger
  • Pine nuts (additional)

Method

  1. Add the cous cous then the same volume of boiled water to it. Leave for the cous cous to absorb the water. 
  2. Chop the sugar snap peas and tomatoes in half then add to the cous cous. Add the tinned tuna, balsmaic vingear and pine nuts. 
  3. Mix them all together then it is ready to eat. 

Quinoa and bean salad
Ingredients
  • 120g of Quinoa
  • Mixed beans (drained and rinsed)
  • Toppings of choice e.g. sundried tomatoes, cucmber and feta cheese

Method

Cook the quinoa
  1. Measured 120g of Quinoa, rinse and then add 360ml of water in a pan. Bring to the boil, then allow to simmer for ~15 minutes until all the water has been absorbed. 
  2. Mix the Quinoa with the mixed beans and toppings of your choice then serve.
