Chilli bean soup

This is my version of a recipe I saw on @Tristan Simpson's YouTube channel (link at bottom of page). Enjoy this satisfying soup/broth.

Serves: 6 people for lunch

Ingredients

For the stew

1 finely diced onion

2 finely chopped carrots

1 finely chopped celery piece

A drizzle of olive oil

1 tin of chopped tomatoes

1 tin of kidney beans

1 tin of black beans

1/3 teaspoon of chilli powder

1/3 teaspoon of smoked paprika

1 vegetable stock cube

500ml of boiling hot water

 

For the topping

Finely diced cheddar cheese or nutritional yeast

 

Instructions

Add the diced onion, carrots, celery and olive oil to a pan, soften them on a medium heat. Then add chopped tomatoes, drained kidney beans and black beans, crumbled vegetable stock cube and boiled water. Allow to simmer for about 10 minutes.

Serve and top with cheddar cheese or nutritional yeast.
