Lunchbox meals

These are may favourite healthy options for lunchboxes either during term-time or on placement. 

Sandwiches
I know this sounds uninventive, but these are good basics for when you have run out of other items in the house. 

My favourite combinations
  • Cheese and peanut butter
  • Cheese
  • Tuna and cucumber
  • Hazelnut chocolate spread
  • What are yours?
For added healthy items add tomatoes, cucmber or carrot sticks.

Cold / Microwave warmed pasta salads
Servings - 2 lunches
Ingredients
4 handfuls of fusili (cook per pack instructions and drain)
1 packet of feta
6 tomatoes halved
a chunk of cucumber diced
1/2 jar of pesto (green or red)

Method
Divide the pasta into two between the two microwavable containers. Divide up the tomatoes, feta and cucumber. Add in the pesto then stir into the mixture. Enjoy.

Green lentil, feta and a balsmic vinegar dressing

Vegetarian Halloumi burgers
Servings - 2 lunches
Ingredients
1 packet of halloumi, sliced
1 backet of 4 brioche buns, cut in half
1 tray of portobello mushrooms, diced
1 sprig of oregano
Some oil

Method
Toast the brioche buns in the toaster on the lowest setting, keep an eye on them to prevent them from burning. 

Fry the onions in some oil on a medium to high heat until they turn orange. 5 minutes into frying the onions add in the halloumi slices and fry until they are golden on both sides, put the fried slices onto each brioche bun slice.

Once the onions are ready, place on top of the halloumi slices. Then add the mushrooms to the pan with more oil. Cook until the mushrooms are darker in colour and have released juice. Add in the oregano leaves, allow to warm for a few minutes then divide the mushrooms between the brioche buns.

Place the top slice over the halloumi slices, onions and mushrooms. Enjoy. I recommend two brioche buns per lunch. 

Leftovers
Why waste delicious leftovers, they are the easiest lunch option available.
